Production Volume of Dairy Whey in Russia Will Increase

In 2010, Russian enterprises produced more than 1 million tons of cheese and cottage cheese, i.e. nearly 6 million tons of natural whey. The given assessment of the production volume of dairy whey differs from official statistic data, according to which dairy whey production amounts to 1.9 million tons. The production volume is considerably understated by the producers with a view to increasing of dairy whey processing rate and evading penalties for environmental law violations.

The main reasons for dairy whey underutilization are seasonality in its obtaining, rapid taint and lack of resistance in the products received by dairy whey processing, the remoteness between the locations of the raw materials receiving and those of the product sales, relatively high cost of dairy whey fodder unit and difficulties associated with its transportation.

In 2006-2010, the production of dairy whey in Russia was decreasing annually. in 2011, according to BusinesStat estimates,  amid milk price rise, and due to the changes in the structure of demand for dairy products, the production volume of dairy whey in Russia will increase.

Increase in the prices for milk has forced the food enterprises to lower product cost. For a long time dairy whey products have not been widely used in the Russian industry. Nevertheless, the industries, which previously used milk (manufacture of ice cream, yoghurts, chocolate) partly began to replace dry whole and skimmed milk with dairy whey, thereby significantly reduced the price of the finished product.
